You find new opponents after recruiting them at to the cantina and you get more playable characters in the mini game by scanning enemy types.

There are a total of 8 Holotactics matches and you can play these opponents after they have been recruited to your cantina.
Holotactics Match Tips
The best strategy to win is to use as may Droideka’s as you can in the back row and your best melee character in front of them to protect them from dying.
